Chinese Crumbly Cookies (Taosu, 桃酥)

These cookies are crispy on the outside and crumbly inside — they melt in your mouth! Taosu is a traditional Chinese cookie, often enjoyed with tea. My version is easy to make at home, with a rich, nutty flavor and simple ingredients. Enjoy!

Steps
- 1
In a bowl, mix cake flour, baking soda, baking powder, and sugar.
- 2
In a separate bowl, whisk the egg and melted butter until combined.
- 3
Add the wet mixture to the dry ingredients. Mix until a dough forms — just press it together, don’t knead.
- 4
Divide the dough into 16 equal pieces. Roll each into a ball and flatten slightly.
- 5
Press a thumbprint in the center of each cookie and sprinkle with black sesame seeds.
- 6
Bake at 170°C (340°F) for 20 minutes, then increase the temperature to 190°C (375°F) and bake for another 10 minutes, until golden. Enjoy!
