  1. 1 1/2 cupsorzo pasta/ditalini/couscous, boiled al-dente
  2. 1 canchickpeas, drained
  3. 1 1/2 cupscherry tomatoes, quartered
  4. 1 1/2 cupscucumber, diced
  5. 1/3 cupolives
  6. 1/2red onion, chopped
  7. 3 tbsp.feta, crumbled
  8. 4 tbsp.olive oil
  9. 2 tbsp.lemon juice
  10. 1 tbsp.mustard paste
  11. 1 tbsp.honey
  12. 1 tsp.dried oregano
  13. To taste, salt
  14. To taste, pepper powder

Cooking Instructions

    In a bowl whisk together olive oil, lemon juice, mustard paste, honey, oregano, salt and pepper till well combined. Set aside.

    In a bowl add the vegetables and chickpeas. Mix well.

    Add the pasta toss.

    Pour the dressing over and mix to coat the salad.

    Sprinkle feta cheese and serve cold.
