Chinese stir fry - Snow Peas with dried shrimps and garlic
Cooking Instructions

Remove both end of the snow peas. See pic below. Fill a bowl with water and wash snow peas. Repeat washing if necessary. Drain and discard water.

Slice snow peas into thin slices. You can grab a few, stack them and slice them at once. It doesn't have to be perfect. See pic below.

Gather dried shrimps, garlic and chillies. Using mortar and pestle, pound them well. Prepare the seasonings and turmeric.

Over medium heat, add 4 tbsp of oil (or as needed) in a pan or wok. Before the oil gets too hot, add finely crushed shrimps, garlic and chillies (see pictures). Add turmeric powder. Stir and continue to sauté these ingredients until aromatic. Add snow peas.

Continue to stir for a minute. Add seasonings - a TSP of chicken bouillon (or to taste) and 1/2 TSP of sugar. Over medium to high heat, continue to stir and cook until snow peas turn bright green and it takes less than 5 minutes depending on how strong is your heat. Taste and adjust seasonings if necessary. Remove from the heat and serve hot over plain warm rice.
