Ingredients

  1. 1serving of udon noodles (fresh or frozen)
  2. 1fresh egg (make sure it’s safe to eat raw)
  3. 2 tablespoonstempura flakes (agedama or tenkasu)
  4. 1–2 shiso leaves, finely sliced (optional but recommended)
  5. 1 tablespoonchopped green onion
  6. 1 tablespoonsoy sauce (or to taste)

Cooking Instructions

    Boil the udon noodles according to the package instructions. Do not rinse with water. Drain well and place directly into a bowl while still hot.

    Crack the fresh egg over the hot noodles.

    Top with tempura flakes, shiso leaves, and green onions.

    Pour soy sauce over the top, mix everything well, and enjoy immediately.

    ✴︎You can also use dashi soy sauce or noodle soup base for added umami.
    ✴︎A dash of shichimi (Japanese 7-spice) adds a nice kick.
