Wash, wipe and peel ridge gourd.

Taste small piece whether it is bitter or sweet.Cut into small pieces.

Heat a pan add oil and mustard seeds.Allow to crackle.Add turmeric powder, chilli powder, coriander powder and ridge gourd pieces.Add soaked chana dal and salt.Mix well.Cover and cook for seven to eight minutes in slow flame till both are cooked.

Our sober ridge gourd bhaji is ready to serve.
