Cooking Instructions

Preheat broiler. Combine all spices in a bowl and then put on a flat plate. Coat each side of the fillets with spices. Place fillets on a sprayed baking sheet. Spray tops of fillets with cooking spray. Broil fillets about 4-5 inches from heat for 8-11 minutes, turning half way through. They should be nice and flaky.

Serve with your favorite veggie or rice and top with lemon slices.

I'll admit that the 'blackening' of the fish in this recipe was accidental when I underestimated the sugar content in the mirin. It turned out to be one of those happy accidents, because the char gave the salmon a slightly smoky bitterness, almost as if it'd been grilled. Cajun cuisine is one of those types the hubby and I absolutely love, but hardly ever eat for some reason. The hubby was craving some blackened anything the other day, so I made this for him using the blackened seasoning I made and it turned out great! It was the first time I had cooked with said seasoning and I was pleased the results met what I've seen in restaurants where we've enjoyed blackened fish or chicken in the past.
