Gazpacho is a popular cold soup from Spain. It is made with simple ingredients and it’s ideal for cooling off during the summer. This version doesn’t contain garlic or sherry vinegar, but it’s still delicious and nutritious.

Note:

-Many Spaniards eat this gazpacho without straining it through a sieve, but personally I find it to be more enjoyable that way.

Ingredients

1-2 servings
  1. 3Tomatoes
  2. 1/2Cucumber
  3. 1/2Green pepper
  4. 3 tbspExtra virgin olive oil
  5. 1 tspSalt
  6. 1/4 tspBlack pepper
  7. 1/4 tspAsafetida (hing)
  8. 1/4 cupcold water

Cooking Instructions

10 minutes

    Assemble all ingredients

    Blend all ingredients until smooth

  3. 3

    Pass soup through a sieve for best results*

  4. 4

    Refrigerate for at least 30 minutes. Mix well before serving.
