In Indian restaurants, they serve Chicken Tikka either as kebabs like I have done or they use these kebabs and make a creamy tomato based curry also called Chicken Tikka Masala.

Ingredients

Overnight marination + 15 minutes
2 people
  • 1.5 poundschicken breast (chicken thighs also fine)
  • 1 cupplain yogurt
  • 2 tablespoonsmustard oil
  • 1 tablespoonminced garlic
  • 1 tablespoonminced ginger
  • 2 tablespoonscoriander powder
  • 1 tablespooncumin powder
  • 1 teaspoongaram masala powder
  • 1 teaspoonsugar (secret ingredient to balance flavors)
  • 1 teaspoonsalt
  • 1 teaspoonKashmiri chili powder- this has less heat and a vibrant color (optional)
  • 3-4 sliceslemon or lime
  • Sprinkling of chaat masala (optional) or black salt (optional)
  • A fewbamboo skewers
  • 1-2 dropsred food color (optional)
  • 3 tablespoonsneutral cooking oil

Steps

Overnight marination + 15 minutes
  1. 1

    Cut chicken pieces in small cubes or chunks. Marinade with the yogurt, mustard oil, ginger, garlic, cumin powder, coriander powder, garam masala, salt, sugar and red food coloring if using. Cover and set it in the fridge overnight. Next day thread the chicken pieces into skewers

    Get your grill pan ready. Heat it on medium heat for a couple minutes and then pour 2 tablespoons oil and spread it with the silicone brush evenly.

    When the oil is hot, place your skewers on the grill pan and keep the heat medium high.

    In a couple of minutes, turn the skewers over and char the other side.

    Cover the pan, lower heat and cook for 30 seconds. Open lid, dip your silicone brush in some oil and brush over the skewers. Turn the skewers one more time and brush with oil again. Do a final turn, reduce heat to low and cover the grill pan and cook for a few seconds so the chicken can cook through.

    Place the chicken tikka on a serving dish. Squeeze some lemon or lime juice on top and sprinkle some chaat masala or black salt. Serve with a condiment of choice (usually ketchup, or tamarind chutney or green chutney), and some freshly cut vegetables strips. Hope you enjoy!!🎉😋
