Typically a sandwich I like to make for brunch when I'm indecisive. It uses up whatever I have available/on hand, highly customizable, satisfying, (and secretly a hangover cure as I've been told! 😏😉) Hope you enjoy!

Typically a sandwich I like to make for brunch when I'm indecisive. It uses up whatever I have available/on hand, highly customizable, satisfying, (and secretly a hangover cure as I've been told! 😏😉) Hope you enjoy!

Steps

Use 1 teaspoon of mayo (or butter if preferred or if mayo is unavailable) to lightly cover one side of both slices of bread. Place in a pan on medium low heat (using non-stick, dry pan as pictured).

Flip bread every 3 to 5 minutes or so until desired toasty color. **Note: Don't worry about the side that isn't mayo-ed (or buttered). The residual will toast the other side.

Once bread is toasted to desired level, remove from pan and place on plate.

In the same pan, same level of heat (medium low heat) crack egg into pan and fry it to desired level of doneness. **Note: You can cook the egg any way you choose in this step -- scrambled, over easy, fried, etc. (I fried it "medium" to where I still had a somewhat runny, kind of "jammy" consistency for the yolk) -- season to your liking (I used salt and pepper).

While egg is being cooked to your liking, use 1 teaspoon of mayo on one of the toasted slices of bread. Place 2 slices of cheese on the same slice of toasted bread (I used Colby Jack and Havarti cheeses)

**On the other slice of toasted bread, use 1 teaspoon of any jam of your choosing. (It sounds weird, but trust me! I promise it's good 😂It's a sweet + salty contrast. I used Red Plum Jam by Smuckers, but any flavor/brand will work, whatever you like!)

**If you choose to opt out of Step 6, it's perfectly fine! You can use 1 teaspoon of mayo in place of it or any sauce of your choosing. Examples: BBQ sauce, mustard, ketchup, etc. Whatever your heart desires! ☺️

Place cooked egg on top of the cheese slices to warm/melt the cheese.

Once you have your desired condiment on the other slice of toasted bread, place your 2+ slices of deli meat of your choosing on top. (I used a combination of what I had on hand -- 1 slice of turkey breast, a few slices of beef bologna [warmed in pan, to get edges crisped] and beef prosciutto)

Place everything together to form a sandwich.

**Optional Step** Place back into the pan on low heat to "warm" it up a bit and to make sure the cheeses are melted. If assembled fast enough, you can skip this step. It should still be quite warm. Or if you want deeper color on the outside, you can do that as well.
