In a bowl, mix the yeast, warm milk, and sugar. Let it sit for 10 minutes.

In another bowl, combine the flour and salt.

Add the melted butter, eggs, vanilla, and the yeast-milk-sugar mixture to the flour and salt. Knead by hand for about 10 minutes or with a stand mixer for 5 minutes, until the dough is smooth and elastic.

Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a clean towel and let it rise in a warm place for about 1 hour 30 minutes.

Divide the dough into several balls and place them in a greased baking pan. Let them rest for 45 minutes to 1 hour, or overnight in the refrigerator.

Brush the brioche with milk or beaten egg for a golden finish.

Preheat the oven to 350°F (180°C). Bake the brioche for 20 to 25 minutes, until golden brown.
