Cook the spaghetti: Boil water in a pan, add a pinch of salt and a drop of oil. Cook spaghetti, about 8-10 mins. Drain and set aside. Saute the vegetables: in a wide pan or wok, heat oil add garlic, ginger, onion and green chili saute for 1-2 mins until fragrant. Add carrot, peas and capsicum cook on medium - high heat for 2-3 mins.

Now add chopped tomato and bok choy. Stir - fry until the bok choy wilts slightly (about 2 mins), add salt, black pepper powder, paprika powder, coriander cumin powder, sugar, soy sauce, dry mixed herbs. Toss everything together: Add cooked spaghetti into the pan/ wok. Toss well so the veggies and flavor coat the spaghetti evenly, (adjust seasoning if needed).

Garnish & serve: Turn off the heat, add a few drops of lemon juice if desired and garnish with spring onion greens and sprinkle paprika powder.
