Ingredients

  1. 1 boxyellow cake mix (15.25 oz)
  2. 1 boxinstant vanilla pudding mix (3.4 oz)
  3. 4large eggs
  4. 1 cupsour cream
  5. 1/2 cupvegetable oil
  6. 1/2 cupstrong brewed coffee (cooled)
  7. 1 tspvanilla extract
  8. Optional: 1 tsp instant coffee or espresso powder (for a stronger coffee flavor)
  9. Optional Coffee Glaze
  10. 1 cuppowdered sugar
  11. 1–2 tbsp brewed coffee
  12. 1/2 tspvanilla extract

Cooking Instructions

    Preheat oven to 350°F (175°C). Grease and flour a bundt pan or a 9x13" cake pan. In a large mixing bowl, combine Cake mix, Vanilla pudding mix, Eggs, Sour cream, Oil, Brewed coffee, and Vanilla extract (Add espresso powder here if using). Beat on medium speed for about 2–3 minutes until the batter is smooth and fluffy.

    Pour the batter into the prepared pan. Bake for 45–55 minutes (Bundt pan) or 35–40 minutes (9x13”) Check with a toothpick—if it comes out clean, it’s done. Let the cake cool in the pan for 10–15 minutes. Turn out onto a rack and let it cool completely before serving.

    Optional Glaze: Mix powdered sugar, coffee, and vanilla until smooth. Drizzle over cooled cake.
