Mysore Pak (Traditional South Indian Sweet)

Mysore Pak is a type of mithai from India. It is prepared with only three ingredients : ghee, sugar and gram flour. It originated in the royal kitchen of Kingdom of Mysore. Mysore is one of the major cities in the Indian state of Karnataka. Rich, luxurious, fudge-like Mysore Pak is a famous Indian treat that is simultaneously buttery and nutty, and will simply melt in your mouth. Mysore Pak is an authentic and traditional South Indian sweet made during festivals like Diwali, Janmashtami and special occasions like weddings and birthdays.

First upon grease a sweet tin or a plate with ghee and keep it ready before you begin cook mysore pak. Now add gram flour in a pan and roast it on slow flame of gas for 4 minutes. Now take out this roasted gram flour in a plate and keep it aside to cool.

Now add ghee to another pan and heat it on a slow flame of gas.

After that, add sugar in another pan till the ghee gets hit up, add water in to sugar and mix it. Melt the sugar on a slow flame of gas and then make a syrup of one string on a high flame. After 5 minutes, take one to two drops of the syrup on your finger and check whether it has become a syrup of one string or not.

Now that a syrup of one string has been formed, add the roasted gram flour little by little to this syrup and keep mixing it on a slow flame of the gas.

Now heat the ghee until it starts to smoke, add one spoonful at a time to this besan mixture and keep stirring. Do this process again till the ghee starts to separate, keep adding hot ghee. As we keep adding hot ghee, the griddle will start to froths and bubbles.

Now our mysore pak is ready, now add cardamom powder in a greased tin or plate, add mysore pak and level it. Then add cardamom powder, chopped almonds pieces and chopped pistachios pieces on top and let it cool for 10 minutes. After it cools, cut it into square pieces or your desire shapes.

Now our soft and smooth Mysore Pak is ready for serve.
