Pour the boiling hot water into the tapioca starch and mix with chopsticks until it forms a shaggy dough.

Let it cool slightly, then knead by hand into a smooth dough. (If it's too dry, add a little water; if too wet, add more starch.)

Dust your work surface with tapioca starch to prevent sticking, then roll out the dough to your desired thickness.

Use a straw to cut out small circles, then roll them into balls. (If you want to save time, they don't have to be perfectly round!) Dust with more tapioca starch to prevent sticking. Take the amount you want to use, and store the rest in an airtight container in the freezer.

Bring a pot of water to a boil. Add the tapioca pearls and cook until they float to the surface, then continue boiling for 5 more minutes. Turn off the heat and let the pearls sit in the hot water for 10–15 minutes (adjust time based on pearl size).

Scoop out the pearls and quickly rinse them in room temperature water to remove excess starch, then drain well.

Mix the pearls with brown sugar to coat them in syrup.

Add the sweetened pearls to your cup.
