Wash the papaya thoroughly with water, remove the skin, and grate it using a grater.
- Rinse the green chilies with water and chop them finely.
- Finely chop the jaggery.
- Cut the dried red chilies into small pieces. - 2
Heat oil in a pan and add mustard seeds and cumin seeds. Once they crackle, add Cinnamon powder,asafoetida, dried red chilies, turmeric powder, grated papaya, and salt to taste. Sauté for about three minutes, then add chopped green chilies and mix well. Cook until the papaya is tender and well-cooked.

Once the papaya is cooked, add grated jaggery and sugar, and sauté for 2-3 minutes. Once the jaggery and sugar melt and blend with the papaya, turn off the heat.

To finish, add methiya masala and red chili powder to the dish, and mix everything together thoroughly.

Now, transfer the prepared raw papaya Sambharo to a bowl. Once it's completely cool, store it in a glass bottle.
