Ingredients

  • Boiled and shredded chicken breast
  • Enough fresh spinach, washed and sanitized
  • 2garlic cloves
  • 1/2small onion
  • Cilantro, to taste
  • 1 cupevaporated milk (240 ml)
  • 1 tablespoonall-purpose flour (about 8 grams)
  • Salt and pepper
  • 3 tablespoonsbutter (about 42 grams)
  • 1/2 cupchicken broth (120 ml)
  • Sour cream
  • Crumbled cheese
  • Avocado
  • Corn tortillas
  • 1little oil

Steps

  1. 1

    In a hot skillet, melt the butter and add the flour, stirring constantly so it doesn't burn. Cook until it turns golden brown.

  2. 2

    Add the chicken broth and stir to combine until there are no lumps.

  3. 3

    Blend this mixture with the spinach, garlic, onion, cilantro, and evaporated milk until smooth.

  4. 4

    In a pot with a little hot oil, pour in the blended mixture. Cook for a few minutes to combine the flavors, then season with salt and pepper to taste.

  5. 5

    Dip each tortilla in the spinach sauce and fill with chicken. Repeat until you have the desired number of enchiladas on each plate.

  6. 6

    Pour more spinach sauce over the top.

  7. 7

    Serve with sour cream, crumbled cheese, and avocado.
