Ingredients

4 Portions
  1. For the Sauce
  2. 1/4 TspCumin Seeds - Ground
  3. 1/4 TspFennel Seeds - Ground
  4. 2Dried Red Chillis - Chopped
  5. 1Green Chilli - Chopped
  6. 1Medium White Onion - Finely Chopped
  7. 1Small tin Tomato Puree
  8. 2Medium Tomatoes - Diced
  9. 1 TbspTomatoe Ketchup
  10. 1 TspChilli Powder
  11. 1 TspCoriander Powder
  12. 3Gloves Garlic - Minced
  13. 1 TspGinger Paste
  14. 1/4 TspTurmeric
  15. 1 TspGaram Masala
  16. 1 TspWhite Sugar
  17. 2 TbspCanola Oil
  18. 1 TbspGinger Sliced thinnly
  19. 1 TbspDried Coriander or 2 Tbsp Fresh Chopped
  20. For the Vegs (Use any or All)
  21. 1Carrot Diced
  22. 1/2 CupGreen Beans Sliced
  23. 1/2small head of Califlower
  24. 6Baby Corn Sliced
  25. 1Small Onion Diced
  26. 2 TbspCorn or Peas (optional)

Cooking Instructions

  1. 1

    Heat the Oil in a large pan and add the Cumin, fennel and chillies fry for one min until fragrant. Add the Onion and Fry on Medium until golden but not browned.

    Add all the Tomotos and rinse out the Puree can with water add to pan and cover, cook on medium for about 3-5 mins until tomatos are fully cooked and sauce thickens. remove from heat.

    In a large Pan add the oil and the sliced ginger, Carrots, beans and onions. add the salt and sugar and cook on medium for 4 mins. Add 1/2 Cup water and other veg then cover and cook for 2 mins. you want veg to be cooked but not soft.

    Add the sauce to the veg and add all other ingrediants - cook on high heat for 2 mins to combine. you can cover and cook longer if you prefer softer but I love slightly crunchy. Sauce hot is Naan or Biryani or any of you other favourites - ENJOY :P

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
