How many times we have eaten thelewali pani puri , ragda puri & dahi batata puri , & yet the craving continues as we notice a thelawala on the streets & say in our minds " Just one more this time & it is the last time that I am eating roadside chat " & before our minds take over our heart , we quickly give order to the thelewala , " Ek plate pani puri , bhaiyya, aur sirf tikka ". 😃😃😃
So guys , here is a healthy version of Delhi 's Chandani Chowk chat which is guilt free & you are free to gorge on as much as you desire .

So guys , here is a healthy version of Delhi 's Chandani Chowk chat which is guilt free & you are free to gorge on as much as you desire .

Ragda : Wash the yellow peas 3 - 4 times in running water. Add fresh water & soak the yellow peas for 3 - 4 hours.

Drain & take the yellow peas in a pressure cooker. Add fresh water in the ragda na vatana / dried yellow peas. Add turmeric powder & salt.Close the pressure cooker & take 3 whistles. Cool.

Open the pressure cooker once air is released. Take the ragda in a pan. Cook the ragda till semi thick (see pic below). Keep the ragda hot till assembling time. Keep the sprinkling masala ready.

For Dahi Puri : Whisk the fresh curds & keep it in fridge till assembling time. Keep the sprinkling masala ready.

Chat Platter : 👇Assemble the puffed up puris in a plate. One by one assemble all the different bowls as shown below in S.No 6,7 & 8.

1) For Pani Puri : Take a big plate. Take 4 puffed up puris in it & make a dent in each of them. Fill the puris with boiled moong & boiled chana. Place these puris in the plate. Place a bowl of minty - coriander herbed pani with salted boondi & khajur - imli chutney bowl beside these puris. Add khajur - imli chutney & minty - coriander herbed pani as per your taste.

2) For Ragda Puri : Take 4 puffed up puris in a bowl & place it in another bowl in the same plate. Make a dent in each puri. Add piping hot ragda in the dent. Fill it to the top. Sprinkle red chilli powder, coriander - cumin powder, chat masala & salt. Sprinkle chopped coriander on top.

3) For Dahi - Batata Puri : Take 4 puris in an another bowl. Make a dent in each one & fill it with chopped potatoes, pour whisked curds & khajur - imli chutney on top. Sprinkle few boiled moong on top. Lastly sprinkle chat masala, red chilli powder, roasted cumin seeds powder & salt. Place this bowl along side the other 2 bowls.

Serve the Chat Platter immediately.
