Thali or wholesome meals are inter woven with Indian traditions & cultures . We have vivid varieties of thali in India ranging from North Indian Thali , Dhaba North Indian thali , to down south comprising of South Indian thali , that also each state in the south with their own signature dishes . Then East India having a show case of Bengali thali, Asamese thali ,so on & so forth. In the west , we have Maharashtrian thali , Konkani thali , Kolhapuri thali , the list is endless .
Here today , we will talk of Gujrati Thali , which I have tried to highlight & it usually comprises of : dal , subji , roti / puri , rice & Gujarati pickles . Their dining tables are lined up with array of pickles in a box .Sometimes fresh seasonal pickles are also made. And Sundays are feast times when the Gujarati thali also includes 1 sweet & 1 farsan. At that time in our houses , we avoid rice & do full justice to a special sweet or two & 1 or 2 farsan , as we Gujaratis are known for Sweet Tooth & Farsan Crazy .

Prepare Kesar - Pista Shrikhand as per the link given below.

Vagharela Palak Patra : Heat oil in a pan, add mustard seeds & let them crackle. Add cumin seeds, coriander seeds & sesame seeds. Cook them for 1/2 a minute. Add asafoetida.

Cut the palak patra rolls into 1/4 inch roundels. Add these roundels in the tempering. Mix & cook till little crispy from all sides, tossing occasionally. Switch off the flame & cover & keep vagharela patra aside.

Tindora - Batata Nu Sambhariyu Shak : Prepare the shak as per the link given below.

Gujarati Khatti - Meethi Dal : Prepare Gujarati Khatti - Meethi Dal as per the link given below.

Chaas / Indian Beer : Take fresh curds in a bowl. Whisk. Add chilled water, roasted cumin seeds powder & salt. Whisk very well. Pour in a serving glass. Keep the glass in fridge till serving time.

Assembling of Gujarati Thali : Line the thali with a bowl of chilled Kesar - Pista Shrikhand, a bowl of hot Gujarati khatti - Meethi Dal, 3 wholesome Roti / Chapati, Tindora Batata Nu Sambhariyu Shak, Vagharela Palak Patra & a glass of chilled Chaas / Indian Beer.

Garnish the shak, dal & palak patra with fresh coconut & chopped coriander.

Serve the Gujarati thali immediately.

Note : In our house, if we serve Gujarati thali with 1 sweet & 1 farsan, we generally avoid eating rice, so rice is not served in the above thali.
