Set Dosa is a South Indian dish made using rice, lentils, flattened rice (poha), and fenugreek seeds. It's easy to make and delicious to eat. It is typically served with red chutney, white chutney, and spiced potatoes.

Soak the rice and lentils in water for 4-5 hours. Soak the fenugreek seeds separately. Once the rice and lentils have expanded, drain and rinse them.

About 30 minutes before grinding, soak the poha in water.

Grind the rice in a blender. Then add the lentils and fenugreek seeds and grind again. Finally, add the poha and grind until smooth.

In a large bowl, combine the ground rice, lentils, and poha. Cover and let the batter ferment in a warm place for 10-12 hours. After fermentation, the batter will double in size. Add salt, baking soda, and baking powder. If needed, add a little water to adjust the consistency.

Heat a griddle (tawa) and sprinkle some water on it, then wipe with a cloth. Pour the batter onto the griddle and spread it thickly. Cover with a plate and cook on medium heat. Since set dosa is thick, keep an eye on it while cooking. Once cooked, remove the plate and take the dosa off the griddle. Repeat with the remaining batter.

Your set dosa is ready. Serve hot on a plate with spiced potatoes and chutney.

Note: You can also make red chutney to serve with set dosa. The dosa can be made without baking soda and baking powder if you prefer.
