Ga kho gung - ginger molasses chicken shortcut Ga kho gung - ginger molasses chicken shortcut
My husband and toddler are both picky. Hubby won't eat meat on the bone and doesn't like dark meat chicken. Toddler thinks slices of ginger are spicy. So traditional Vietnamese ga kho gung with bone-in chicken thighs and lots of sliced ginger won't work in our house. I came up with this lazy riff on it and got both hubby and toddler approval. Vietnamese Chicken Lemongrass | Gà Kho Sả Ớt Vietnamese Chicken Lemongrass | Gà Kho Sả Ớt
Chicken lemongrass is a staple Vietnamese home comfort food that I’m sure most of us couple probably eat everyday! I used free run chicken to keep it authentic and for me to savor the nostalgic flavor of the time mom makes it in Vietnam. Of course you can use any chicken to your liking. The lemongrass aroma as well as the deep savory flavor of this dish will make you eat more rice than you normally would! It’s addicting! We do have 2 version of this dish, one is braised (kho) and one is Stir-fry (xào). Only difference is the braised version is more saucy and the other is dry. This is the saucy version. If you want it to be more of a dry stir fry version, just add less liquid. I like the sauce version because I can use the sauce for dipping veggies! Quoc Nguyen | Chef Q -

Vietnamese Chicken Noodle (Dry) Miến Gà Trộn Vietnamese Chicken Noodle (Dry) Miến Gà Trộn
This Vietnamese Chicken Noodle uses mung bean noodles (glass noodles) and is a cousin of the Cambodian dish pehnomvang Noodles. You can eat it as a soup base using the broth or in this case, make a soy base sauce for the dry version (soup on the side). It’s easy and straight forward. Boil the chicken, make the sauce, and boil the noodles. (Besides some pre-made toppings like fried shallots) Quoc Nguyen | Chef Q
