Start by heating the air fryer, I use max heat, cut salmon into squares and place it in to cook. No need for oil

Meanwhile, chop mushrooms, leeks and slice the garlic. Add the mushrooms to a skillet without oil, cook on medium heat for around 2 minutes. Add leeks and coconut oil.

Lower heat and stir-fry until leeks have softened, add the garlic, curry paste, cook for a few more minutes.

Now add coconut milk, water, fish sauce, and salt.

Wait until the salmon gets crisped up. Add it to the curry & enjoy.
