Ingredients

  1. 1 cupMoong dal – (soaked)
  2. 2-3Green chilies – (adjust to taste)
  3. 1 handfulPudina (mint) leaves
  4. 1 inch pieceFresh ginger
  5. Salt – to taste
  6. 1 tbspMustard oil or any preferred oil

Steps

  1. 1

    Traditional Touch:
    Using a silbatta (stone grinder), grind the soaked moong dal until smooth and fluffy.

    Add Zing:
    Now add ginger and pudina leaves to the silbatta and grind them into a fresh aromatic paste.

    Blend the Flavours:
    Mix the pudina-ginger paste into the moong dal paste. Add green chilies and salt. Grind again until well blended.

    Finish with Oil:
    Add a tablespoon of oil to the chutney mixture and mix until well combined.

    Shape and Serve:
    Shape the chutney into small round balls.

    Traditional Plating:
    Serve warm over a banana leaf with:

    Steamed rice

    Brinjal fry

    Mashed raw banana

    A drizzle of ghee and a pinch of salt
