Ingredients

  1. For the dough 🌾🫓:
  2. 1 cupall purpose flour
  3. 1/4 tspsalt
  4. 2-3 tbspoil/ ghee
  5. 1 tspbaking powder
  6. 1 tspwhole cumin seeds
  7. 1/2 tspmixed dry herbs
  8. Cold water to knead
  9. For the filling🫛🌿:
  10. 1/2 cupBengal gram lentils - soaked for 2 hrs
  11. 3 tbspfresh green peas - crushed
  12. 1 tbspoil
  13. 1/2 tspcumin seeds
  14. 1/2 tspgrated ginger
  15. 1-2finely chopped green chili
  16. 1/2 tspgaram masala powder
  17. 1/4 tspdry mango powder
  18. 1/2 tsppaprika powder
  19. 1/2 tspcoriander cumin powder
  20. 2 tbspfinely chopped coriander leaves
  21. Salt to taste
  22. For yogurt garlic dip 🧄🥣:
  23. 1/2 cupplain yogurt
  24. 1 tbspgarlic (grated)
  25. 1/4 tspsalt or to taste
  26. 1/4 tspred chili powder
  27. 1/8 tspblack pepper powder
  28. 1/4 tsproasted cumin powder
  29. 1 tspfinely chopped coriander leaves
  30. For lava core- chili garlic chutney 🔥🌶️🧄:
  31. 1 tspgarlic paste
  32. 1/2 tspred chili powder
  33. 1 tspoil
  34. 1 pinchsalt

Cooking Instructions

    Prepare the dough 🌾🥣: in a mixing bowl, add flour, baking powder, cumin seeds and salt mix in oil/ ghee. Rub until crumbly. Gradually add cold water and knead a soft, smooth dough. Cover and let it rest for 20–25 mins. Make the filling 🫛🌿: heat oil in a pan, add cumin seeds, grated ginger, finely chopped green chili. Saute for a few sec. Add mashed Bengal gram lentils and crushed green peas. Stir in garam masala powder, paprika powder, coriander cumin powder, dry mango powder and salt.

    Cook for 3 mins and let it cool. Prepare the lava core 🌋🌶️🧄: in a small bowl, combine garlic paste, red chili powder, oil and salt. Let it sit to thicken. Assemble the kachoris 🤲🥟: Divide the dough into 6 balls. Roll each into a small disc. Place 1-2 tsp the gram - peas filling in the center. Add 1/2 tsp of chili garlic chutney right in the middle. Seal carefully and gently, flatten into discs.

    Bake the kachoris 🔥⏲️: preheat oven to 180°c, place kachoris on a greased baking tray. Brush tops lightly with oil/ ghee. Bake 25–30 mins, flipping once halfway. Until golden and crisp. Make the yogurt garlic dip 🧄🌿: whisk yogurt with garlic, roasted cumin powder, salt, red chili powder, black pepper powder and finely chopped coriander leaves and mix well, chill before serving.

    Garnish & serve ✨🌿🍽️: with roasted peanuts, finely chopped coriander leaves, sprinkle of Chaat masala and red chili powder.
