Cooking Instructions

Prepare the dough 🌾🥣: in a mixing bowl, add flour, baking powder, cumin seeds and salt mix in oil/ ghee. Rub until crumbly. Gradually add cold water and knead a soft, smooth dough. Cover and let it rest for 20–25 mins. Make the filling 🫛🌿: heat oil in a pan, add cumin seeds, grated ginger, finely chopped green chili. Saute for a few sec. Add mashed Bengal gram lentils and crushed green peas. Stir in garam masala powder, paprika powder, coriander cumin powder, dry mango powder and salt.

Cook for 3 mins and let it cool. Prepare the lava core 🌋🌶️🧄: in a small bowl, combine garlic paste, red chili powder, oil and salt. Let it sit to thicken. Assemble the kachoris 🤲🥟: Divide the dough into 6 balls. Roll each into a small disc. Place 1-2 tsp the gram - peas filling in the center. Add 1/2 tsp of chili garlic chutney right in the middle. Seal carefully and gently, flatten into discs.

Bake the kachoris 🔥⏲️: preheat oven to 180°c, place kachoris on a greased baking tray. Brush tops lightly with oil/ ghee. Bake 25–30 mins, flipping once halfway. Until golden and crisp. Make the yogurt garlic dip 🧄🌿: whisk yogurt with garlic, roasted cumin powder, salt, red chili powder, black pepper powder and finely chopped coriander leaves and mix well, chill before serving.

Garnish & serve ✨🌿🍽️: with roasted peanuts, finely chopped coriander leaves, sprinkle of Chaat masala and red chili powder.
