A classic in most Bengali households and is called Mola Carplet in English. It’s a fresh river water fish that is very nutritious for health. I made a Chorchori and it’s a 100 years old recipe that I have cooked many times and love it. The use of mustard oil is more to bring out the flavour. This would taste best with steamed rice.

Cooking Instructions

Wash the Mourala Mach and clean the fish. Set aside
- 2
In a bowl soak mustard seeds for 3-4 hrs with green chilli and make a fine paste
- 3
Slice the onions and slit the green chiliies
- 4
In a wok add Mourala mach, sliced onions, slit green chillies, mustard seed paste, turmeric powder, red chilli powder, salt and mustard oil, bring it to low flame
- 5
Cook covered and water should dry up and mustard oil should be on the surface
- 6
Plate and enjoy with steamed rice - a classic indeed !
