Kathiyawadi Bharwa Baingan & Potato Sabji is a flavourful stuffed baingan & potato dish cooked in a rich gravy with traditional Indian spices.
Steps

Take all the ingredients for Wheat Flour Chapati & Bharwa Baingan & Potato Sabji.

Firstly take a roasted sesame seeds to the mixture grinder and make a coarsely powder of it, Now take a bhavnagari gathiya to mixture grinder jar,

Now add mix chavanu to it and coarsely grind both of them together, Now take a bowl and add coarsely ground sesame seeds powder, gathiya and mix chavanu coarsely powder and coarsely ground peanut powder to it, Now add all the dry masalas like asofoetida powder, turmeric powder, coriander powder, kashmiri red chilli powder, garam masala powder and salt to taste,

Now add 1tbsp oil and mix it well, Now add finely chopped coriander leaves to it and mix well, Now take potatoes and baingan make a slit between them, Now fill the mixture between potatoes and baingan,

Now take a steamer and steam the baingan and potatoes for 20 mins, Now take a pan heat oil and add asofoetida to it,

Now add turmeric powder, kashmiri red chilli powder and coriander powder to it and add little water to it, so masalas don't get burnt, Now add ready mixture of masala to it, Now mix it well and cook until oil releases,

Now add steamed potatoes and baingan to it and mix well, Now cook for 5 mins, Our Bharwa Baingan Potato Sabji is ready to serve, Garnish with Coriander leaves and serve hot with Wheat Chapati.

Now for wheat Flour Chapati, Take a bowl and add wheat flour, oil and water to it and knead a soft dough from it,

Take a dough and knead the dough with ghee and make small balls from it, Now dust the small balls of wheat dough,

Now make the rotis from it, Now our Wheat Chapati is ready,

Now apply ghee on it and serve hot with Bharwa Baingan and Potato Sabji.
