Steps

Cook onion and garlic until soft

Add chopped mushrooms and cook gently until brown

Add thyme now if using dried thyme. Fresh thyme can be added as garnish

Add just enough water to cover the mushrooms and bring to the boil
- 5
Remove from heat and allow to cool a little before blending until smooth.

Add chicken stock and return to heat. Simmer gently for 5 minutes

Add salt and pepper to taste and serve with creme fresh and fresh thyme (if using) as garnish
