This stewed chicken turns out delicious. First, place about 4 Roma tomatoes (one for each piece of chicken), half an onion, and 4 cloves of garlic on a skillet or griddle. Roast them, turning so they char on all sides.

Once they're ready, transfer them to a cutting board and peel them. Place the garlic, onion, and tomatoes in a blender or food processor. Add the juice of half a lemon, half a chipotle pepper in adobo sauce (remove the seeds first), and 1/2 teaspoon salt or chicken bouillon powder. Blend until smooth.

You can either boil the chicken first and then add it to the sauce, or place the chicken in a pot with 1 teaspoon olive oil and lightly brown it. Then add the sauce and cook the chicken in it. Taste for salt and add a pinch of oregano. Serve with rice, beans, and tortillas.
