Combine the flour with basil or oregano (if using), salt, and sugar in a bowl. Stir, then add the yeast.

Add the egg, then the softened butter.

Gradually add the water, mixing until you get a soft dough.

Let the dough rise until it doubles in size.

Divide the dough into 6 equal pieces. Roll each piece into a circle, place the filling on one half, then fold the dough over to close.

Place the filled dough on a nonstick baking sheet, or sprinkle a little semolina underneath to prevent sticking.

Brush the tops with beaten egg, sprinkle with nigella seeds, and bake at 350°F (180°C). After baking, broil for 5 minutes until golden.
