Cottage Cheese Pancakes

I've always loved pancakes—my favorite meal any time of day! To boost the protein, I started adding cottage cheese. I actually enjoy cottage cheese on its own, but in these pancakes, you’d never know it’s there—they’re soft, satisfying, and deliciously disguised.

In a large bowl, combine the cottage cheese, pancake mix (or homemade flour and baking powder mix), and water (or milk for a creamier consistency).
If you’re using the egg for extra protein, add it to the mixture and stir to combine.
Add vanilla extract if desired for extra flavor. Stir everything together until the batter is smooth and combined.

Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Once the pan is hot, scoop about 1/4 cup of the batter onto the skillet for each pancake.

Cook each side for about 2-3 minutes, or until golden brown and cooked through. Flip the pancakes carefully once you see bubbles on the surface, and cook the other side until golden.

Once cooked, transfer the pancakes to a plate.
Serve them warm with your favorite toppings such as maple syrup, fresh fruit, yogurt, or a sprinkle of powdered sugar.
