Credit to my mother-in-law for introducing me to this simple, comforting recipe—one my husband loved growing up. After the first try, it quickly became a breakfast staple in our home. It’s easy to make and requires minimal cleanup!
Steps
- 1
Bring a pot of water to a gentle boil. Carefully add the 4 eggs and cook for 6–7 minutes for soft, jammy yolks. Remove and place in a bowl of cold water to cool slightly, then peel gently.
- 2
While the eggs cook, toast all 4 slices of bread to your liking. Butter each slice generously while warm.
- 3
Tear or cut the buttered toast into bite-sized pieces and divide evenly between two bowls.
Place two peeled soft-boiled eggs into each bowl. - 4
Use a fork to gently break up the eggs so the yolk runs over the toast. Season with salt and pepper to taste. Stir gently and enjoy while warm!
