Ingredients

30 minutes
4 servings
  1. 110 gplain flour sifted
  2. pinchsalt
  3. 2eggs
  4. 275 mlmilk
  5. 50 mlvegetable oil to fry pancakes
  6. 3peppers one of each colour cut into small strips
  7. 1red onion, chopped
  8. 2 tbspsun-dried tomato paste with herbs
  9. 2 clovesgarlic, crushed
  10. 10 ggrated cheddar
  11. 1/2 tspsalt
  12. 1/2 tsppepper
  13. 150 gchopped walnut
  14. 100-200 mlsour cream
  15. 2-3 tbspolive oil for the pepper mix

  1. 1

    Sift the flour and salt into a large mixing bowl, and break in the eggs. Begin whisking the eggs into the flour and gradually add small quantities of the milk until combined.

    In a small-medium frying pan, add 1 tsp oil and let it heat up really hot. Using a small ladle pour the batter into the hot oil and swirl it around to cover the bottom of the frying pan. It would take around a minute or less before turning (or tossing) the pancake over. Cook the other side.

    Using the same frying pan add the oil and fry the previously cut peppers and onions. Add the garlic, salt and pepper. When peppers are soft mix in the sun dried tomatoes. Cook for another 30 seconds until well combined.

    Now, fill half of each of the pancakes with the peppers, sprinkle cheese and fold in half.

    Lay them in a row drizzle with sour cream and chopped walnuts. Enjoy.
