I made the kids the simple breakfasts they asked for and then was hungry for something myself. I had one small fresh tomato from my garden that still needed to be used and wanted eggs so decided to make a stovetop frittata.

I made the kids the simple breakfasts they asked for and then was hungry for something myself. I had one small fresh tomato from my garden that still needed to be used and wanted eggs so decided to make a stovetop frittata.

Spray a small (6 inch) nonstick skillet lightly with cooking spray. Heat over medium heat. When skillet is hot add chopped tomato and cook for 2 minutes, stirring around a couple times.

When tomato is cooked, ensure pieces are dispersed evenly in the skillet. Gently put scrambled eggs evenly over tomatoes. Top with broken pieces of the Swiss cheese. Turn heat down to medium low, cover, and let cool untouched until center is just set. Should take about 5 minutes.

Sprinkle with parsley if desired, carefully transfer to a plate (you may have to invert skillet onto plate). Add any other condiments such as hot sauce, salsa, sour cream, or creme frais. Enjoy!
