Steps

Wash the potatoes thoroughly. Cut them into halves. Do not peel the skin as these roasted potatoes taste best with skin.

Now take water in a pan. Add sendha namak. Once the water starts boiling, add the potato halves. Cover & cook on slow flame for 10 minutes. They should be 80% cooked.

Open the lid, & check the potatoes. If they are 80% cooked, switch off the flame & drain them.Cool them for 20 - 25 minutes.

In the meantime, roast the ingredients for the masala on slow flame, till aromatic. Switch off the flame & cool the masala a little.

Grind the masala coarsely. Keep aside.

Now take ghee & oil in a pan. Add cumin seeds & let them crackle. Then add chopped ginger & green chillies. Saute.

Add the potatoes & cover & cook them for 2 minutes. After 2 minutes, they would have turned little golden.

Again cover & cook them for 3 - 4 minutes, stirring after every 1/2 a minute, so they are roasted evenly & turn golden & crispy.

Now add coarsely ground masala & mix well. Add lemon juice for tanginess. Add chopped coriander. Again mix well & switch off the flame. Our Ekadashi Special crispy & golden potatoes are ready. Remove in a plate & serve immediately.

Variation : 1) You can roast Sweet Potatoes, Purple Yam, jamikand (suran), the same way.

2) If not making for fast (vrat), you can add red chilli powder & also dried red chillies.
