Hawaiian Empanada in the Air Fryer - Cooksnap Marathon

Today we're tackling the big question: “Pineapple on pizza, yes or no?” 🍍 For me, it's a definite yes! When I saw this tropical empanada from @Paquila74, I just had to save it and try it myself. I added a tomato base, and honestly, it's amazing. I like to make homemade dough, and since we had some left over, instead of making tuna empanadas like usual, we made this recipe two nights in a row because it was so good. 🤭😋

1 empanada
  1. Empanada dough
    Masa para empanadas/empanadillas
  2. 1 slicefresh pineapple
  3. Tomato sauce or fresh tomato
  4. 3 slicesturkey breast
  5. 3 slicessemi-soft cheese (like Monterey Jack or similar)
  6. 1/2ball fresh mozzarella cheese
  7. Oregano
  8. 1egg
  9. Salt

    First, prepare the pineapple. Peel and dice it. Sauté the pineapple in a skillet over medium-high heat for a few minutes to release as much water as possible. When the skillet is dry, remove the pineapple. This helps prevent the empanada from getting soggy.

    Roll out the dough on parchment paper (if it's homemade) to make it easier to handle. Spread a layer of tomato sauce over the dough, leaving the edges clear. Cut the cheese slices into pieces and add them on top, then sprinkle with oregano to taste.

    Next, cut the turkey slices and add them. Then, distribute the pineapple evenly over the base.

    Before closing, crumble the mozzarella and sprinkle it over the pineapple.

    Cover with another layer of dough, seal the edges well with a fork, and trim any excess with a knife.

    Crack the egg into a bowl, add salt, and beat. Brush the top of the empanada with the beaten egg before cooking.

    Place the empanada in the air fryer (no need to preheat) at 350°F (180°C) for 17-19 minutes or until golden brown.
