Koliwada is an exquisite Indian snack or a starter dish that has it's origins in Maharashtra. This Vegetarian version is a tribute to the original Koliwada Fish Fry boasting of deep fried and crisp Chickpeas.
The Koli people are an ancient Fishing community with a rich history in the coastal areas of the State of Maharashtra including Mumbai. Koliwadas are essentially Villages or settlements primarily inhabited by the Koli community. They have been living in the State even much before the City became a major Urban centre. There are numerous Koliwadas in the State some considered as older Villages and others formed more recently.

Worli Koliwada is a stronghold of the Koli culture and is a testament to their long standing presence in the State. This recipe is a perfect choice for any party or a weekend special holiday. Or even a special occasion or a family get togethers. Not only is it done easily, it unfolds a culinary magic of the Koli community and especially their Fishing practices. There have been umpteen variations made nowadays and each is absolutely delicious. It would definitely make for a lip-smacking homemade Starter dish to make any party come alive. Ingredients

20-25 minutes
6-7 servings
  1. 1 1/2 cupspar boiled Chana or White Chickpeas
  2. 1 tspGinger Garlic Green Chilli paste
  3. 1 tspSalt or to taste
  4. 1 tspRed Chilli powder
  5. 1 tspCumin powder
  6. 1 tspCoriander powder
  7. 1/2 tspTurmeric powder
  8. 1-2 tbspMustard Oil
  9. 1 tspDry Mango powder or Amchur
  10. 1/2 cupRice flour
  11. 1/2 cupGram flour or Besan
  12. For deep frying -
  13. 3 cupsOil
  14. For final topping -
  15. 2bulbs of Garlic
  16. 8-10Green Chillies
  17. 1-2thinly sliced Onions

Steps

20-25 minutes
  1. 1

    First of all, parboil the soaked and drained chickpeas. Pressure cook for best results. Let them cool down before proceeding with the rest of the recipe.

    Add all the spices to a bowl along with the mustard oil. And finally toss in the chana or the chickpeas. Top it up with both the flours too. Mix well using water as required. Do not use much of it though.

    Heat oil for frying on a medium high. Fry the chana that's been marinated for almost half an hour. Fry until crisp and done. In the same oil just before winding up the cooking, add garlic cloves and the whole green chillies for frying.

    Slice onions as well. Now top it up with raw onions and fried garlic cloves and green chillies. That's it. Serve it straight away. Enjoy!
