🥒 An easy, tasty, and refreshing salad that goes well with many dishes. It's vegan and gluten-free, making it a great addition to your table!

Wash and peel the cucumber in stripes (for appearance, but you can peel it completely or leave the skin on). Slice it thinly. Place the slices in a bowl or colander and sprinkle with salt. Toss to coat and let sit to draw out excess water. Set aside while you prepare the other ingredients.

Finely chop the shallot (or green onions), garlic, and ginger. Place them in the bowl you’ll use to serve the salad.

Add the rice vinegar, soy sauce, sesame oil, and maple syrup.

Add the sesame seeds and mix all the ingredients together.

Finally, drain the salted cucumber slices and add them to the bowl. Toss everything together and enjoy!
