In a bowl, mash the banana.

Add pancake mix, oats, egg, and milk. Stir until just combined.

(If mixing into the batter) Gently fold in strawberries and/or walnuts.

Add cinnamon or vanilla if desired. Let the batter rest 2–3 minutes to thicken.

Heat a nonstick skillet or griddle over medium and lightly grease.

Scoop batter (about ¼ cup per pancake) onto the skillet.

Cook 2–3 minutes until bubbles form and edges are set. Flip and cook another 1–2 minutes.

Serve warm with your favorite toppings—strawberries, walnuts, syrup, honey, or Greek yogurt.
