Ingredients

10 minutes
2 servings (about 4–6 medium pancakes total)
  • 1ripe banana, mashed
  • 1/2 cuppancake mix (use your favorite boxed mix or homemade batter)
  • 1/4–½ cup rolled oats
  • 1egg (optional — adds protein and structure)
  • 1/4–½ cup milk or water (adjust for desired batter consistency)
  • 1/2 cupchopped strawberries (mix into batter or use as topping)
  • 1 oz(about ¼ cup) whole walnuts, roughly chopped (mix into batter or use as topping)
  • 1 tspcinnamon or vanilla extract (optional)

Steps

    In a bowl, mash the banana.

  2. 2

    Add pancake mix, oats, egg, and milk. Stir until just combined.

  3. 3

    (If mixing into the batter) Gently fold in strawberries and/or walnuts.

  4. 4

    Add cinnamon or vanilla if desired. Let the batter rest 2–3 minutes to thicken.

  5. 5

    Heat a nonstick skillet or griddle over medium and lightly grease.

  6. 6

    Scoop batter (about ¼ cup per pancake) onto the skillet.

  7. 7

    Cook 2–3 minutes until bubbles form and edges are set. Flip and cook another 1–2 minutes.

  8. 8

    Serve warm with your favorite toppings—strawberries, walnuts, syrup, honey, or Greek yogurt.
