This simple three-step method preserves the natural taste of firm pears without water – just sugar and fruit. A rich syrup forms as the pears are gently boiled, cooled, and boiled again.
Steps

Peel and slice the pears. Use enamelled cookware if possible.

Add 1 kg sugar to the pears and let them sit for at least 2 hours to release juice.

Once the pears have juiced, place the pot on medium-high heat.

Add 600 g more sugar and stir constantly to prevent burning.

Once boiling, simmer for 5 minutes, then remove from heat and cool to room temperature.

Bring to the boil again, simmer another 5 minutes, and let cool once more.

For the third time, bring to the boil and simmer for 5–10 minutes until the syrup thickens.

While the syrup is still liquid, pour into clean glass jars.

Seal with lids and store in a cool place.
