First, heat water in a pot. Rinse the soya chunks well and add them to the hot water.

Add salt and, after 5 to 7 minutes, turn off the heat. Drain the soya chunks in a strainer. Place the cilantro, cumin seeds, ginger, garlic, green chili, curry leaves, and boiled potato on a plate.

Chop the cilantro and all other ingredients. In a blender jar, add the soya chunks along with ginger, green chili, and garlic.

Add the curry leaves and cilantro, then blend and transfer to a large bowl.

Mash the boiled potato and add it to the bowl along with the onion. Add the roasted chickpea flour (besan).

Add red chili powder, turmeric powder, chaat masala, coriander powder, and garam masala. Mix well. Add oil and mix thoroughly.

Heat a nonstick pan and add a little oil. Shape the mixture into your desired shape and cook the tikkis on both sides until golden. Prepare all the tikkis in the same way.

Your high-protein soya tikkis are ready. Place them on a serving plate and serve. I served these tikkis with green chutney.
