Beetroot Tikki

Beetroot is a superfood, rich in iron, which helps increase hemoglobin and combat anemia. It also helps regulate blood pressure. Beetroot is high in fiber, which aids digestion and helps prevent constipation. You can eat beetroot raw or cooked, and use it in soups, juices, or smoothies. Here, I have made beetroot tikki (patties).

Wash the beetroot, cut it in half, and cook in a pressure cooker until you hear 3 whistles.

Let it cool, then peel and grate the beetroot. Grate the boiled potatoes as well. Finely chop the green chilies and onions, and grate the ginger.

Grind the bread in a blender or food processor to make bread crumbs. Gather all the spices.

In a bowl, mix the grated beetroot and potatoes together.

Add the onions, ginger, and green chilies. Add all the dry spices and mix well.

Add the bread crumbs and chopped cilantro, and mix to form the tikki mixture.

Shape the mixture into patties of your desired size.

Heat oil in a pan. Coat the patties in bread crumbs and shallow fry on medium heat until golden on both sides. (You can also press some white sesame seeds onto the patties if you like.)

Serve the prepared beetroot tikki with cilantro chutney.
