I a large Pan heat the coconut on a medium heat and toast it. it will go an amazing dark golden colour. Then Allow to cool.

Put into a pestle and mortar or spice grinder Add the salt and oil and pound until a paste in formed.

You can store in an airtight jar for a couple of weeks until needed. ENJOY :P
