Serves 2 servings
  1. 1/2 cupred lentils (about 100 grams)
  2. 1 cupvegetable broth (about 240 ml)
  3. 1/4 cupcrushed tomato sauce (about 60 ml)
  4. 1/2 cupcoconut milk (about 120 ml)
  5. 1 teaspooncurry powder
  6. 1/2 teaspoonturmeric
  7. 1 teaspoonground cumin
  8. 1/2small onion, finely chopped
  9. 1 clovegarlic, minced
  10. 2 tablespoonsolive oil
  11. Salt and pepper to taste
  12. 1 containerunsweetened plain soy yogurt
  13. 1 teaspoonfresh lemon juice

    Heat the olive oil in a pot and sauté the onion until golden.

  2. 2

    Add the garlic and spices, and stir for 30 seconds.

  3. 3

    Stir in the tomato sauce, vegetable broth, and salt. Cook for 10 minutes.

  4. 4

    Add the coconut milk and lentils, and cook for 5 more minutes.

  5. 5

    Adjust the texture with more water or let it reduce as needed. Season with salt and pepper to taste.

  6. 6

    Mix the soy yogurt with the lemon juice.

  7. 7

    Serve the dhal hot and top with the lemon yogurt mixture.
