Peel the potatoes and onion, then fry them in plenty of hot oil.

Or, as I do: peel the potatoes and onion, slice them very thinly, add oil and salt, and microwave in 4 batches of 5 minutes each, stirring after each batch.

Beat the eggs and add sobrasada to taste, previously melted in the microwave for 30 seconds.

Mix with the potatoes and onion, then cook on both sides until set.
