MIX VEG ROGAN JOSH (an innovative kashmiri cuisine recipe)..

Take a wok, add 2 tbsp oil, heat it, add all the veggies except paneer, stir fry it for 2 minutes, take out in a bowl, keep aside.

Add 2 tbsp oil in the same wok, add paneer pcs, stir fry it for a minute, take out in the same bowl, keep aside.

Now add oil accordingly in the same wok, heat it, in goes whole garam masala, saute it for 30 sec.

Add in onion, garlic & ginger paste, mix it well, add lil water, stir fry it until oil has oozed out.

Mix haldi powder, dhania powder, red chilli powder & saunf powder with 1/2 cup water, add in the masala.

Stir fry it until oil has surfaced.

Now add tomato puree & salt, mix it well, cook it covered on low flame until oil has oozed out.

Open the lid, add garam masala powder & kashmiri red chilli powder, mix it well, increase the flame, cook it for 30 sec.

Now add fried veggies, stir fry it for a minute.

In goes 2 cup hot water, mix it well, give a boil.

Lower the flame, cover it with the lid, cook it until all the veggies r almost cooked. Gravy consistency depends on ur choice. Turn off the flame, open the lid after 10 minutes.

Take out in a serving bowl, garnish it with chopped dhania patta...

U can make it in pressure cooker also...give 3 whistles on high flame, cook it on low flame for 3 minutes.
