Capsicum subji
Steps

Collect fresh green capsicum, clean with water,cut into small cubes. Chop the green chillies and coriander leaves. Keep aside.

Keep a fry pan on medium heat,add besan,fry till the aroma appears. Transfer to a bowl.

Keep another pan on medium heat, add ghee and oil, mustard seeds, cumin seeds, asfetida and green chillies. Fry for a few minutes. Then add the capsicum cubes. Mix well. Then add the red chilly powder, cumin powder, coriander powder,gram masala powder and salt.

Mix well and close with a lid for two minutes. Then open the lid,add ground besan powder and mix well.

Mix it for a few seconds. Then add the ground peanut powder. Mix well and add chopped coriander leaves,mix well. Jain capsicum subji is ready.

Transfer to a serving bowl. Enjoy the tasty satvik jain capsicum subji with roti, phulka and rice.
