Tear Malabar spinach leaves and chop them into pieces. Cut the stems into 1-inch pieces, chop them, and stand them upright to halve them.

Add soaked poppy seeds to a mixer jar, along with soaked mustard seeds and 1/4 cup water, and blend into a smooth paste.

Heat mustard oil in a non-stick pan. Add potato pieces and sauté until golden brown. Drain on a plate.

In the remaining oil, add a pinch of fenugreek seeds, 2 chopped green chilies, and saute for a few seconds.

Add grated Malabar spinach with stems and saute for 1-2 minutes.

Add turmeric powder, mix, and cook for 2-3 minutes.

Add the ground paste and mix well. Add 1/2 cup water, mix, then add potatoes and salt. Mix and cook for 8-10 minutes.

Turn off the heat, transfer the Poi Shaak to a serving bowl, and serve hot.
