Steps

Wash methi leaves and chop them. Add all ingredients and mix well.

Add water to knead the dough. Make small fist-shaped dumplings - Muthiyas. Fry in oil till it turns crispy and golden brown. Keep aside Ina plate.

Wash and peel off sponge gourd. Chop them into dice. Cut tomatoes and make puree in a mixer jar.

Take a pan, add oil, mustard seeds, carrom seeds, hing, garlic, and ginger chili. Saute them well. Add tomato puree and cook for a couple of minutes.

Add diced galka, add salt and turmeric powder. Mix well. Add water as required. Cover it, cook till it turns soft, and is cooked. Add red chili powder, coriander jeera powder, garam masala, and jaggery.

Now add fried muthiyas, mix in the curry. Cover a lid. Cook all for 3 more minutes. Methi Muthiya Galka Nu Shaak is ready to serve.

Serve it warm with steamed rice, roti, puri, or paratha. Enjoy.
