Add the chopped zucchini. Choose the smallest and most tender zucchini you can find.

Cover the pot and cook until the zucchini are tender. Then add the four eggs and the mozzarella cheese.

Stir and cook until the eggs are set and the mozzarella is melted. Serve and enjoy!
