Take all the needed gredients.

In a bowl, add water and bring to a boil. Add rinsed adai and close the lid and keep aside for 15 minutes.

Strain the half cooked adai, rinse with cold water, and set aside.

In a heavy-bottomed vessel, add milk and bring to a boil. Stir often.

Once it boils,add 1/2 cup sugar and continue boiling until milk reduces to half.

Add the adai to the milk and cook for 10–15 minutes, stirring often. Collect the malai and mix it to the milk.

In another pan, caramelize 2 tablespoons sugar. Add 1/4 cup water to melt the caramel.

Add the caramel to the payasam,it gives a beautiful pink color. Cook for 5 more minutes and turn off the heat.
Tips
Stir the milk often to prevent the adai from sticking to the pan.
